# Directions:
- Thoroughly rinse rice under cold water. In a saucepan, bring water or chicken broth to a boil with salt. Stir in rice, reduce heat, cover, and let simmer until tender—approximately 15–20 minutes for white rice or 35–40 minutes for brown rice. Fluff with a fork after cooking.
- In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Coat chicken thoroughly with the spice mixture.
- Heat a large skillet over medium-high heat. Add chicken and sear for 5–6 minutes per side until fully cooked and deeply browned. Transfer to a plate and let rest 5 minutes before slicing or dicing.
- In the same skillet, melt butter over medium-high heat. Add corn kernels and sauté 4–5 minutes until lightly charred in spots. Let cool slightly. In a bowl, mix corn with mayonnaise, sour cream, chili powder, smoked paprika, crumbled cheese, lime juice, and chopped cilantro until evenly coated.
- Divide cooked rice among four serving bowls. Top each with sliced chicken, a generous portion of street corn topping, avocado slices, extra cilantro, and lime wedges. Drizzle with hot sauce if desired.
