01 - 4 pork breakfast sausages, sliced into 1-inch pieces

02 - 2 medium Honeycrisp apples, cored and cut into thick slices
03 - 2 large Yukon Gold potatoes, diced
04 - 1 red bell pepper, chopped
05 - 1 small red onion, peeled and sliced
06 - 2 cups baby spinach (optional, added last 5 minutes)

08 - 1 teaspoon dried thyme or rosemary
09 - 1/2 teaspoon smoked paprika
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon freshly ground black pepper

# Directions:

01 - Preheat the oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
02 - In a large bowl, combine the diced potatoes, apple slices, chopped bell pepper, and sliced onion with olive oil, thyme, smoked paprika, salt, and pepper. Toss until evenly coated.
03 - Spread the seasoned vegetables and apples evenly on the prepared pan. Distribute the sausage slices evenly among the mixture.
04 - Roast in the preheated oven for 25 minutes.
05 - Remove the pan from the oven and stir the mixture. If adding eggs, create four wells in the ingredients and crack one egg into each well. Scatter the baby spinach around the eggs.
06 - Return the pan to the oven and bake for an additional 8 to 10 minutes, until eggs reach desired doneness and sausages are golden brown.
07 - Serve immediately, garnished with extra herbs or chili flakes if desired.
